EDGO Experience
EDGO works with local philosophers and young generations to preserve local wisdom, traditions and ways of life. Starting from research and interviews with bearers of local knowledge, the knowledge is then presented through special workshops and activities related to “eat”, “do” and “go”, encouraging participants to not only learn about this wisdom, but go and experience it first hand.
Workshop Overview
This workshop offers a broad overview of fermentation. You will learn about the fundamental concept of local fermentation and the potential health benefits of fermented foods. You will also engage in making your own fermented products from local plants, mushrooms, and meat. Fermenting your own food is one of the best gateways to understanding the fermentation process. In this workshop we will also explore the nutritional aspects, cultural significance, and intuitive process of fermenting food.
Workshop Goals:
- Build familiarity with ingredients used
- Learn key concepts of local fermentation, cultural background, and practices
- Gain hands-on fermentation experience (participants will walk away with a jar of their own product to ferment at home).
- Taste local fermented food and learn how to use them in local cooking
